"And they're off" is something Americans sometimes say when a horse-race begins. But I'm not implying that anyone here is a horse, or that this is any sort of horse-race. Although metaphorically I guess the morphers are the jockeys and their morphs are the horses. But that's not very clear, is it?
"And they're off" is something one says to convey one's excitement at the beginning of a contest, race, or other kind of competition, but it's generally used in competitions that last only a few seconds or minutes, whereas this one will of course last a couple of weeks... that's "last" as in "endure", not "last" as in "hindmost". Hm, not any clearer.
