I still miss our Notty. Keenly. :(

Lest anyone think I'm all foodie all the time, it's not so. Last night I had four Twinkies and a Diet Coke for dinner (which reminded me of Notty's post). If I smoked (which I never have... one of the few vices I haven't indulged in) I'm sure at least two of the Twinkies would've been replaced by cigarettes. To atone (and because I was starving) I made lunch today as follows:

Chicken glass noodle bowl (makes about 6 servings)

Dice and toss around in wok or pan: 1 red onion, 3-4 scallions (just the white bottoms), garlic, ginger, chili/garlic paste, sesame oil, salt/pepper/spice mix

When above items are done, add (to warm): 1 rotisserie chicken, deboned and shredded and 3 small bunches of glass (bean thread) noodles, soaked in hot water for only 5 minutes

And sauce and mix. Sauce: dashi stock w/soy, Mirin, sugar, cooked over high heat til thickened (you can use bottled Teriyaki or oyster sauce or something like that if you want instead)

Served over: 3 cups white rice, rinsed 3x/cooked firm

Garnish with minced green scallion tops, sesame seeds and pickled ginger slices.

Reliably delicious. :)

Today is Tuesday which means ... 3 tacos for $1.09 at Del Taco or you can have a 1/2 bean and cheese burrito for $ 1.00 anytime of the week so guess what I had.... ;D  ( I know, I'll probably burn in Hell but what the hell. After all, sometimes you've got to eat something bad for you in order to remain sane.  ;D )

No pic, but I made a baked pasta casserole thingy last week and my guest, who usually has the appetite of a sparrow, had seconds. It was just al dente penne with shredded chicken, onion, broccoli, mushrooms, etc... in a light chipotle-based sauce (just pureed chipotle peppers in adobo sauce mixed with dark/thick chicken stock) baked under a bubbling golden crust of Oaxaca and Manchego cheeses, garnished with scallions and cilantro. You know something's extra tasty when even the fourth or fifth frozen leftover you've had of it still fills you with joyful deliciousness. :)

I found a good recipe for a flan/chocolate cake combo that doesn't require me to have a stand mixer, so I may give that a try soon.

I have a sudden hankering for so-good-it's-bad greasy Chinese takeout. On the menu: shrimp fried rice, General Tsao's chicken, and egg rolls.

I'm a bit late to answer this: No, I'm not a vegetarian, although I don't eat much red meat these days; mainly for health reasons. I don't have any health issues, but I feel eating a good diet will keep it that way.

That fish was so tasty, I had a little more last night. With it is that "rice maker fried rice" I described some weeks back, this time with pork and shrimp, with cilantro and sweet chili sauce on top: there was so much stuff in it that it would have been fine as a main dish by itself. I made lots, so have plenty of leftovers. :)

Made this simple lasagna a few days ago.
Because Kithara can not handle heavy spices most people would find it not very "Italian" - but she likes it.
The salad is field greens, artichoke hearts, avocado wedges with a mild vinaigrette.
Had some homemade lemonade with it.

Real simple.

(yes that is a wave of catchup across the top - did I mention it was no very spicy)
