Re: the second half of your query, I firmly believe that this was her last appearance as a professional model:

In 2000, Alexis appeared in "The Wetter The Better," a chapter of D. Kelly Marsalis' "Return Of The Ultra Vixens." Marsalis shlocked it up with cheesy transitions, stage waits and obvious off-camera directions (you can see her saying "okay" 3 times as she crosses the pool.) Despite that and less than 4 minutes of screen time, we get to marvel at Joyce/Alexis' most eye-popping, traffic-stopping, jaw-dropping, fly-busting voluptuousness ever...and get to see how gorgeous she really was in her natural coloring!

She did appear at Glamourcons after 2000. But no longer modeled that I'm aware of.  :'(

P.S. IMHO, she's never lost an inch or an ounce of her unique charm as the years have gone by!  ;)

We all bought erotic magazines for the words, right? Of course we did! Here's a prime example. This is the Fling International issue from 1995 that introduced me to Alexis/Joyce. She was new to me at that point. I had no idea about her previous incarnations and modeling work. I thought her interview was fascinating. She certainly was unlike most of the woman who did any kind of work in the sex biz. For one thing, she came across as being rather uninterested in sex. Rather, she was all about good old fashioned love. It sure threw the interviewer, Arv Miller, for a loop! During that time when she modeled and made appearances as Alexis (and sometimes Joyce), she was consistent with the reasons she made a comeback - to show what real large breasts looked like at a time when implants were so popular, and that women in their 40's could still be considered sexy. She certainly wasn't trying to compete with all the other models and strippers who appeared in magazines along with her. She wasn't promoting anything other than just herself and her 40+ hotness!

There are 11 pages in this series. I'm including the pictures, which most of you will recognize as the pink flower series shot some time in the early 90's by Scotty Fair. Other images from that session appeared in Hustler and Juggs. You can tell because of the telltale scratch mark (some say hickey) on her right (her left) breast. For whatever reason, in this Fling issue the photo editor reversed half of the images, so the flower appeared on the right side of her head (her left). I corrected them for this upload series.
