Again, I sadly have no image attachment since my camera gave up the ghost (I wonder where that phrase came from) since tonight's culinary adventure was every bit as photogenic as it was delicious.
Having company this evening and a lot of ground chicken in the fridge, I made not one but two chicken meatloafs, using a total of 4 lbs. of ground chicken, a half-can of Panko (Japanese) breadcrumbs, 2 eggs and previously minced and sauteed: a large green bell pepper, a few small red peppers from my garden, a white onion and a 5 oz. package of button mushrooms. All gently combined, put into loaf pans, topped with thick slices of smoked bacon ends and then glazed with a mixture of ketchup, garlic, mild chili powder and pomegranate seeds (don't laugh, I have one in the fridge and figured it's sweet tartness would substitute nicely for the brown sugar or honey I'd normally used to promote caramelization). Cooked at 375F for about 45 minutes till the thermometer read 150F inside (the last 10 degrees would come from the resting time).
Un-f'in-believable! Texture: perfect. Not too dense due to overwork in the least. Taste: scrumptious. Not over-salted nor over-seasoned... simply a savory and delectable repast (which is a very good thing considering how much of it I made... I'll be having scrambled eggs with meatloaf for several mornings to come). On the side, I roasted some sweet potatoes and carrots with diced onion in olive oil, made some buttered pasta (mini-shells), and my guest brought one of her excellent salads (jeez, how I love Belgian endive) and a very nice bottle of white wine.
Again: sorry I don't have a picture... it was really quite a pretty meatloaf.
PS: I will say that Chelsea Handler is much more entertaining after a couple of beers.
